Parsnip harvested today.

One parsnip root was pulled today, cooked and tasted. Parsnips were direct seeded on 20 April 2008. Parsnips can be left in the ground until freeze-up, and it is mentioned that they get sweeter with a touch of frost.The root has the flavour and texture of a sweet potato, and very pleasant to ingest, almost too sweet. There was no evidence of a woody center, and the root could be described as perfect. This vegetable is not often served, considering once it was a main crop substituting for the potato. It stores well, by placing in dry sand or peat moss, similar to storing carrots.

Hi Durgan,

I really envy you that parsnip patch, I find them a bit hard to grow myself. Have you tried them roasted? They're delicious.

Last night, as the family were going home today, we had our family favourite Roast Leg of Lamb and I happened to have a couple of lovely parsnips in the cold room, I agree with you Betty Roasted parsnip is a joy to eat.

Have you ever shaved them and deep fried, they make lovely chips too.

Durgan your garden is an absolute delight.

Parsnips seeds are sometimes hard to germinate. Mine are planted very carefully, as soon as the ground can be worked in the Spring. Apparently the seeds germinate at cooler temperatures than other plants. New seed should be used, since parsnip seed doesn't keep well. It is always a thrill to have a good patch of parsnips.

I did roast in my Dutch Oven container in the oven. It is far superior to boiling. They were cooked in their own juices. Actually I seldom boil any vegetables in water.

That looks like a nice feed. I'm going to pop out shortly and see if my carrots and parsnips are coming up. The radishes I oversowed them with are coming up nicely.

Durgan, lovely parsnip pics. I'm sure they taste terrrific.

I haven't sown any yet, but I've got the spot ready. Must have for a roast dinner, and I like them cooked 50/50 with carrots and mashed together. Never saw that until I met MIL. Now I love it.

We do that Robbin. It was one of my faves as a child, and is probably very English, as my Grandmother used to do it.

just bought a couple more parsnips yesterday.

$11.99 a kg. I nearly put them back, but thought, no we love em.

Will have to grow some next winter.

Love them roasted, and mashed with carrots. I bought five lovely looking roots at the local organic coop some months back and planted them for seed. The plants grew well and I'm hoping they'll go to seed soon.
