Rhubarb Clafoutis

Post  Mad Gnome on Fri Aug 22, 2008 10:10 am

I was just thinking that a rhubarb clafoutis would be delicious. Problem is - I don't have a reliable clafoutis recipe. I know, there are tons of recipes out there, but I tried a recipe once and it was a disaster. The quantities just weren't right.

So, who does have a tried and tested recipe they'd be willing to share?
I can send a picture in return. Smile

The term was new to me also, but I have had similar desserts.

http://en.wikipedia.org/wiki/Clafoutis
Clafouti, sometimes spelled clafoutis, is a custard-like baked French dessert that is typically made by baking fresh fruit (traditionally cherries) and a batter, somewhat similar to pancake batter, in a baking dish.

When other kinds of fruit, such as plums, prunes, apples, cranberries or blackberries are used instead of cherries, the dish is called a "flognarde" (sometimes spelled "flaugnarde").

I suppose rhubarb falls into the second category.
