Rainys Mango Chicken

RAINY'S MANGO CHICKEN


2 or 3 chicken breast fillets or thigh fillets - sliced or diced and rolled in flour and lightly browned in frypan

sauce:
1 jar mango chutney
1 Tablespoon mayo
1 cup cream
1 Tablespoon curry
fresh or tinned mangoes sliced or chopped

mix 5 ingredients above together and combine with chicken. place in a casserole dish.

Bake at 180 for 40 minutes covered and a further 15 minutes uncovered.

serve with rice & garnish with chopped spring onions or parsley.

this is also nice done in a slowcooker too and can be cooked on top of the stove as well

the joy of this recipe is that you can add more or less of any of the ingredients to your own taste

Do you use the hot Indian chutney scratch or just off the shelf from the stoopidmarket Rolling Eyes

nope I use baxters mango chutney , from safeway or any supermarket there is another brand but its to spicy for me ,we dont like to much spice as I find it masks the flavour of the food to much ,but thats just me
